Shannon Paige Corrigan
I am born and raised in Las Vegas. I am Pre-Med and hope to practice in Las Vegas. I am interested in Psychiatry currently, but who knows what the future holds. I believe in a collaborative effort in medicine and am excited to get to work with people from so many different disciplines to make this website. Also, Go Knights Go!
Tanya Cooper
I was born and raised in Wenatchee, Wa. Growing up in a town and in a family that was agricultural and grew much of their own food, I developed a lifelong passion for nutrition and health. The majority of food I consumed came from my family’s gardens, orchards, cattle ranch, home-raised chickens, and from fishing and hunting. I truly had the opportunity to eat farm to table for a good portion of my life. After moving away to attend college, the experience of eating the common American diet pushed me to want to learn more about the science of nutrition and exactly how food affects the body. I am currently scheduled to graduate with a Bachelor’s of Science in Nutrition at UNLV, on May 18th, 2019. My future plans are to become a Registered Dietitian and complete a master’s degree in Nutrition. My ultimate goal is to provide accurate information to the public regarding health and nutrition through counseling and conducting research.
Jennifer Deng
I was born in Shanghai, China and lived there until I was about 5 years old, where I then moved to Las Vegas, Nevada and lived until I went to Los Angeles for two years to attend university. Living in three distinct places in my life gave me both a varied perspective of food, diet, and lifestyle. Thinking back, what I would have for breakfast, or even the snacks I would eat as a child in Shanghai, is not something I see here. I remember having porridge, or soup dumplings known as Xiao Long Bao for breakfast, but in Las Vegas, when my parents were short on time, I would eat cereal or toast and eggs. This brought about my interest in food and how it affects lifestyle and quality of life, as well as how it bridges the gap between people of different cultures and upbringing. I'm also an avid fitness fanatic (as seen in my bitmoji...)!!!
Shane O'Brien
I was born in Lynwood CA, but was raised in Medford, OR. After graduating from high school I joined the Marines Reserves. After completing my duty as a reservist I had a family and was certified as a surgical technician and worked at a level 2 trauma hospital. A few years later when the war first started, I decided to go back into the service, but decided to join the Navy. I finished my 20 plus years in military and am now accomplishing my second chapter of my life working on my degree in getting my certification in radiology.
